Congrats to Aji Latin American Restaurant, our June 2014 Zero Waste Business of the Month!
Going for Zero Waste is a priority at Aji Latin American Restaurant -- educating staff on how to sort waste correctly is part of the training process, which makes it possible for the restaurant to recycle and compost a high percentage of its discards with us with very little contamination.
All organic matter is put to good use -- it is either composted through Eco-Cycle or taken to Aji's own Three Leaf Farm in Lafayette. At the farm, the food scraps or kitchen trimmings are used for chicken feed or composted and added back into the soil. In addition, Aji serves produce grown on the farm, reducing their carbon footprint associated with the transportation and refrigeration of these items. Also related to compost are their carry-out containers; when you leave Aji with food or drinks, you will be taking them in compostable boxes or cups that can later be converted into soil, not Styrofoam or ones lined with plastic.
